Hansik at Sining ng Pagbuburo: Ang Agham ng Kimchi at Pamanang Kimjang

Fermentation is the foundational pillar of Hansik. For millennia, Koreans relied on specialized earthenware jars called Onggi, fashioned from porous clay with microscopic vents that permit airflow while keeping rain and insects out—truly "breathing pots".

Traditional vessels are associated with preparing and storing doenjang soybean paste, gochujang pepper paste and ganjang soy sauce. Flavours, ingredients and production methods differ by recipe and maker.

Kimchi is not limited to cabbage. Examples include radish kkakdugi, cucumber oi-sobagi and watery dongchimi, reflecting differences in season, ingredients and local traditions.

In late autumn as winter approaches, communities gather across Korea for Kimjang: preparing massive quantities of Kimchi to sustain families through freezing months.

UNESCO inscribed Kimjang in 2013 to honor its social solidarity. Rooted in traditional reciprocal labor (Pumaasi), families and neighbors laugh, season leaves together, and distribute freshly made Kimchi to elderly neighbors, affirming deep community ties.
